Tomato Seafood Salad
Ingredients:
2 large tomatoes
1 1/2 cups prepared seafood salad
large leaves of lettuce
dill
Breton or Vivant Crackers
Preparation:
Turn each tomato stem-side down making three cuts across the center to within one inch of the stem side. Carefully spread the six wedges apart. Mound seafood salad in the middle of each open tomato. Garnish with dill and place on lettuce leaves. Serve with crackers. Makes a light meal for two.
Helpful hints:
Using smaller tomatoes, you can easily add this dish to the hors d'oeuvre table. For an equally tasty alternative, try tuna salad in place of the seafood mixture. Add a slice of cheddar over the top of the tuna and broil the tomatoes until cheese is melted.
